French Toast Roll-Ups

Happy Wednesday! :) Are you enjoying your week? It's going MUCH too quickly for me. Phew, life gets crazy in November! :D

ANYWAY. This recipe I actually tried over a year ago, when we were in Oregon. :D The photos were on my laptop, and it was just too much work... ;D

These are French Toast Roll-Ups from The Girl Who Ate Everything.

These were good! I like anything with cinnamon and sugar. :D They *were* a little labor-intensive, but I wasn't making a bunch of them. Just enough for me. :D

I used peanut butter and cream cheese - individually. :) They're really kid-friendly - fill with whatever the faves around your house are!

Breakfast Pie

 Good Monday Morning! I hope you've had a great weekend, and are ready for your week! :) (Seriously. Is anyone, EVER????)

Today's recipe share is for Breakfast Pie from Joyful Momma's Kitchen.

This is so much a YES, PLEASE! that the first time I made it, I didn't even get to photograph it! :D I made it for my Bible study ladies, and we all devoured what we had; I put the rest in the fridge, figuring to eat some the next day and photo it then.

Didn't happen. :D

Kenn wanted to know if he could finish it off! Of course I said yes - and remembered, hours later, that I hadn't gotten a photo for you!

Guess I'd have to make it again....
So I did, for our farmer friends in Indiana. And I forgot: I should have doubled the recipe, because they need FUEL to work as hard as they do. But they were SO polite, and saved Kenn the last piece. :D

The second time, I used bacon bits. For one thing, I was using someone else's kitchen, and that always throws me off (and makes things take longer to make!). For another, it's SOOOOOOO much quicker! :D

Also, I didn't do the corn flakes thing. It's already got potatoes in it, and I didn't want to add more carbs! Neither time did I do them, and no one felt like it was missing ANYTHING. :D

I hope you do try this; it's really good, really easy, and will get rave reviews. :D

Copycat IHOP Pumpkin Pancakes


Welcome to Monday! Did you have a good weekend? Kenn and I are gone for a bit, but you don't have to miss out on my reviews this time. You're on my TO DO list before I leave! :D

Today's review is this recipe for Copycat IHOP Pumpkin Pancakes from Raining Hot Coupons.

This is definitely a YES, PLEASE! recipe. I used pumpkin puree that I made from a sugar pumpkin; it was a little funny that it only needed a little for the recipe, but I did it, anyway. :D

They were really nicely spiced, and VERY fluffy. I halved the recipe because Kenn was gone - and because he refuses to believe he actually likes things with pumpkin in it (although he does! :D). Mom had one, and she really liked them!

I probably put a little more cinnamon in than it called for. (OK. I KNOW I did. :D ) They were REALLY good, and very easy. I think you should put these on the menu for sometime soon! :D Ooooh, how fun to do these for breakfast, then go to the pumpkin patch or apple orchard! It would be a perfect fall day!

Hash Brown Waffles


Welcome to Monday! :)

So, I got a chance to make brunch for Kenn and me a few weeks ago; this is one of the things I made - Hash Brown Waffles from Tea & Cookies. (For those of you who don't come to the blog often, just click on the name of the blog, and it will open another window with the blog directly to the recipe!)

Now, I used Simply Potatoes instead of taking the time to do my own. I didn't add the onion, but added onion powder. I should have taken the time to done some onion, but the flavor was OK with the powder. :)

The biggest PRO about this recipe? Not having to babysit them on the cooking surface. I always seem to have twenty things that need my attention at the same time, and doing the hash browns this way was SO much easier. Then, there's the fact that you could add just about anything you wanted in the waffle iron, too. So super easy to do!

The con? I like having a crispy outside and a tender inside, but these were mostly crispy. I tried adding more potatoes, but it just squished them flatter. :) It was quite a conversation-starter, though! :D

Bacon and Spinach Quiche

Welcome to yet another Wednesday! Brrrrrrr. Will this be the last dip into freezing weather for Middle Tennessee? I don't know - but it's been a long, sustained winter for many people. Everywhere I go, people are talking about how ready they are for spring. And they mean it - they usually only have about a few days, people say it as soon as it drops below 40, and then it's warm again and many people love it. YUCK. :D

ANYWAY. :D

There's nothing like a good breakfast. Although I hate eating early in the morning. And by the time I'm hungry, it's usually too late for me to cook anything. :D I planned, this time, and had everything I needed. When I asked Kenn if he'd like breakfast, he eagerly agreed. So, I made this Bacon and Spinach Quiche from Mr. Breakfast.com.

This definitely gets a YES, PLEASE. I used a store-bought crust. If I had to make the crust and roll it out for breakfast, I'm not sure I'd ever do it!!! :D I'm not sure I used heavy cream; I think I used half-and-half. (I did this one about a month ago, and my memory's not what it used to be! :D ) Other than that, I did exactly what the recipe said to.

YUM. Healthy, for the most part - especially since I didn't use heavy cream :D - with fresh spinach. Warm, and Kenn LOVED it. So did another family member who came to visit! :)

OK. I'm outta here. It's an incredibly busy week - but such a great one! I'm getting to spend time with friends this week. I'm gonna be all tired out, but it will be a GOOD tired. :D

Pumpkin Cinnamon Rolls with Caramel Icing


Welcome back - it's Wednesday! Are you trying anything new in your menus this week? Gotta tell you, there are SO many recipes out there, I could make something new every meal and not run out of ones I really want to try. :D

Today's recipe is from The Girl Who Ate Everything, for Pumpkin Cinnamon Rolls with Caramel Icing.

First, I hate to tell you, but I didn't do the caramel icing. Sorry. It was one more step in a too-busy day, so I used some regular buttercream I had left from some cookies. :) It LOOKED good, the icing recipe, but I was DONE. LOL! I made these for a hostess stamping club brunch get-together.

Everyone seemed to LOVE them! :)There was a taste I couldn't identify that I would work on discovering and "fixing" if I make these again - but they were VERY tender, and you could tell they were pumpkin - the dough was soft and pumpkin-colored. :D The recipe made EXACTLY a dozen rolls.

I think I'll give them a YES, PLEASE! With that being said, I'm not sure I'll make this particular recipe again. Maybe. Again, there are SO many recipes for pumpkin cinnamon rolls...!

Fluffy Ricota Pancakes


Happy Friday! How are you today? I've picked up a head cold somewhere that wants to stay - but it needs to LEAVE! Oh, well. It's a beautiful day, with sunshine after the storms all day long yesterday.

Today's review is these Fluffy Ricotta Pancakes from The Kitchn.

These were a YES, PLEASE. Since one batch made less than ten pancakes, I had some and put some in the freezer. I've already eaten the ones that were in the freezer; they froze beautifully! They are fluffy, and tasty. They were also pretty easy, thanks to my Kitchen Aid to beat the whites for me. :D

Easy Breakfast Casserole


Good Monday Morning!!!!!

Did you have a good weekend?? Man, was I BUSY. Phew! I got a LOT done, though. :)

So! Today's recipe - worry, I didn't get a picture of my last manicure, but it was gross - is for Easy Breakfast Casserole from Recipe.com.

I made this for my hostess club at the end of September; it was brunch time, so I wanted something a bit hearty, but that I wouldn't have to babysit. This sure fit the bill! :)

I wanted to use red pepper instead of green - the color would have been nice - but the only ones I could find were obviously made of red GOLD, so I went with the more inexpensive green. :)

Let's see. Did I change anything else? Hmmm... Yup. :D I used butter instead of the Country Crock, half-and-half for the 2% milk, and diced ham instead of the bacon.

This is a definite YES, PLEASE! It was easy, and very good - who knew I'd like broccoli for breakfast?!?!? :D I'm thinking I'd like to add some spinach, too - just about anything veggie-wise that you like would be simple enough. :)

Buffet Pancake Dippers

Happy FRIDAY! Do you have a busy weekend planned? I swear, I think EVERY weekend is BUSY these days...!

Anyway. :D



The pancake recipe I reviewed already? Well, I used it to do these Buffet Pancake Dippers from Lady Behind the Curtain.

Don't you love my new serving dish? :D I put sugar-free syrup on one side, regular on the other - and we each had our own dipping cups!

I used turkey bacon. And I didn't like these much; I think turkey bacon has a strong flavor on its own, but the flavor did NOT come thru in these. I don't think it would have been any different if I'd used real bacon, either. So I'm saying, NO, THANKS! to these. It didn't save any time, didn't taste wonderful.

Brunch Puffs

Happy Wednesday!! Hope you're having a wonderful week! Today we bid adieu to July. Wow, so hard to believe!

ANYWAY. :D Waaaaay back in May, I had a dear friend - who's in Africa right now, on a missions trip - over for brunch. I wanted it to be peaceful and renewing for her; she's a very busy woman, and I wanted our time together to be a time for her to BREATHE. So, Mom helped me set the table...

And I made lots of new recipes for breakfast. Actually it was three, but two of them will be in a review together. :D I can't believe I haven't already reviewed them!

Today's recipe is for Brunch Puffs from Taste of Home.












I made the puffs the day before; they turned out really delicately. There's less flour in the recipe than I'm used to, but I followed the directions exactly. :) (I had extra puffs, because I didn't want to make ALL of them for just the two of us! I used them with fruit in them, and a bit of sugar-free cheesecake pudding. YUM.)

They were a bit messy to eat; the puffs collapsed easily when cut into. But they were very good. I would call this a delicate dish, overall - it sounds like it would be quite filling, but it really wasn't overly so. Quite yummy! :) I'm going to say YES, PLEASE! to these. :)
